GARLIC PARMESAN ROASTED BRUSSEL SPROUTS
Great keto/low carb side dish. INGREDIENTS 16 oz Brussel Sprouts 3 tbsp olive oil 1/2 tsp salt and black pepper 1 tsp Italian seasoning 3 garlic cloves, minced 1/2 cup grated parmesan INSTRUCTIONS Preheat oven to 400. Trim the bottom off the Brussel Sprouts then slice in half top to bottom and rinse. Prepare a large baking sheet. Line with parchment paper if you wish. Pat the Brussel Sprouts dry with a paper towel and place in a large bowl. Add olive oil, salt and pepper, Italian seasoning, garlic and parmesan. Toss gently to coat evenly. Place on the prepared baking sheet, spreading evenly into one layer. Bake 25-30 min until golden brown. Makes 6 serving Homemade Mayonnaise
1 large egg 1/2 tsp. Salt 1/4 tsp dry mustard 1/4 tsp white pepper 1 cup oil 1 TBSP lemon juice SWEET POTATO FRITTERS
One Large sweet potato 3 T. light brown sugar(packed) 1 teas. cinnamon 1/2 teas. ginger pinch of cloves and nutmeg 1/2 teas. salt 1 large egg 1 teas, baking powder 1 cup all purpose flour 1 teas. vanilla Heat oil in heavy pot to 365 degrees. Simmer sweet potato till soft in pot of water. (about 25 minutes) Remove peel and put in bowl. Add brown sugar, spices and salt. Whisk till smooth. When mixture is lukewarm, whisk in egg and vanilla. Stir in flour, baking powder, salt and vanilla into batter. Drop by T. sized dough into 365 degree oil. After 30 to 40 seconds turn over. Turn over again after another 30 to 40 seconds. Turn over again for 30 to 40 seconds. Remove and put on paper towels. Sprinkle with powdered sugar. |

Funnel cake!!
3 cups store bought pancake batter 1-1/2 cups milk 2 teaspoons vanilla 1/4 cup sugar 4 tablespoons vegetable oil 2 eggs Drop your batter into hot grease. Fry in vegetable oil for about 2 minutes on each side at 350 degrees. Drain on paper towel lined plate. Sprinkle with powdered sugar and enjoy. |
Upside Down Pecan Bundt Cake

This soft, moist and not too sweet cake base goes well with the crunchy and nutty pecan pie topping that resembles a filling to make a match by heaven.
Ingredients - One box yellow cake mix 1 packet instant vanilla pudding. 3 eggs 1/2 cup oil 1 cup of water Instructions - Mix everything together in a bundt pan, rectangular or oval spray with baking spray. Melt one stick of butter however, put the butter that has been melted in a pan. In the pan, cover the bottom with brown sugar. place pecans on top of the brown sugar and butter. Sprinkle cake mix over the top of the pecans. Bake at 350 degrees for 35-45 minutes. Bundt pan takes 45 minutes. Cool it before transferring it to a plate. |

Ingredients 8 medium fresh beets 1 cup vinegar 1/2 cup sugar 1-1/2 teaspoons whole cloves 1-1/2 teaspoons whole allspice 1/2 teaspoon salt Directions Scrub beets and trim tops to 1 in. Place in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 25-30 minutes or until tender. Remove from water; cool. Peel beets and slice; place in a bowl and set aside. In a small saucepan, combine vinegar, sugar, cloves, allspice and salt. Bring to a boil; boil 5 minutes. Pour over beets. Refrigerate at least 1 hour. Drain before serving. Enjoy !!! Trust me!
