Introducing the Shelf-Stable Basics!!
This is a super way to do your meal prep in bulk - those tedious tasks you do night after night while preparing your meals, making them shelf-stable, and cutting down your prep time night after night!
So let me know some of the day-to-day things you do in preparing meals for your family that you'd love to see converted to a dehydrating recipe!
*Note on ground beef. Optimally, it is best to keep this in the freezer for long-term storage as fats can go rancid on the shelf, and it's hard to remove ALL traces of fat. However, your mileage may vary about how long it is shelf-stable for you.
- Mirepoix (the celery/carrot/onion mix many traditional dishes have)
- Holy trinity (the celery/bell pepper/onion mix found in many Cajun/Creole dishes)
- Caramelized onions (tip - rehydrate in the skillet with a little water and butter for a deeper flavor!)
- Ground Beef *
- Meals in a Jar (yes, if you have a meal ready and just need to add water and let it simmer while you do other things - that's a HUGE time saver!)

Do you often feel less than those you see on social media doing it all?
Do you worry that you can't preserve it because you can't grow it all?
Please take a moment to watch this week's video! It's on the short side!
I'm offering you a bit of encouragement if you can't grow a garden enough to produce all the food your family needs. Or even if you can't grow at all. And I do a quick inventory of my secondary dehydrating pantry.
Don't feel discouraged because your life isn't like those you see on social media growing and doing it all. It's great that they can do it - and it's #goals for many of us. But it's not the reality for most of us.
So do what you can how you can and take pride in what you're doing!
There is no shame in this preserving game - however you do it!
Until next time...
Nevertheless, she preserved!
P.S. I hope watching this video gives you a lot of encouragement for your situation!

Canning jars are a favorite plastic-free method of food storage for a lot of people, but what about freezing mason jars? Can you freeze in mason jars? Yes, you can, but there are some guidelines for safety that you should follow.
What can you freeze in mason jars?
As long as you follow the guidelines laid out below, you can freeze most things in glass jars. Freeze smoothies so they’re ready to grab and go for lunch. Freeze bone broth, homemade soup, chili, or fruit juice. You can freeze cooked beans to have them ready for adding to meals or making hummus. You can freeze fresh berries or pesto. And you can even freeze homemade jams and jellies. |

Storing Canning Jars With Water in Them...
|
I’ve seen many posts asking about storing empty jars. So I’m sharing the wisdom of my grandmother. She taught me this in the 1960’s and I have been doing this ever since.
These jars are not sealed as this is water. It is clean water that can be used for washing or for consumption. If you are concerned about stored water, remember, IT’S WATER. You can boil it before consuming it. As long as your source is safe, the water should be safe. These are my ‘empty’ canning jars. If you notice, they aren’t really empty. They are filled with water. My grandmother always said that an empty jar takes up just as much space as a full one. NEVER put an empty jar on the shelf. If you don’t have anything to can or store in it, fill it with clean water. This has come in handy many times. In February 2021, here in Texas, we had a deep freeze. We were without power and water for about a week. We kept warm with a fireplace and blankets. For water, I had my canning jars. Even the small 4oz jelly jars had water in them. The stores were out of bottled water, so no one could get any for over a week. I had some neighbors who knew I had jars full begging me for my water. I had shared this wisdom nugget and been ridiculed for it. I see posts in other groups and videos saying to stock up on bottled water. I’m doing what my grandmother said. I’ll keep my empty jars full of water |

Simple 2-Ingredient Raspberry Jam Recipe (thespruceeats.com)
Raspberry Jam Recipe for Canning {The BEST!} - The Frugal Girls Cherry toms for canning. They are so amazingly delicious that I plan to do this every year. So simple, just wash, cut in half, season with pink Himalayan sea salt, black pepper, dried basil, oregano, parsley and olive oil. Roasted at 400, stir every 30 mins. Took around 2.5 hours.
I've been missing out! Edited to add: Another option is to freeze in vacuum sealer bags to have small portions on hand and to save some time. |
